PROFESSIONAL BRASS CUTTER WHEEL
This professional cutter wheel represents the excellence for chefs and pasta lovers.
Top quality product, handmade in brass with ergonomic wooden handle.
Its weight allows the wheel to penetrate deeply, offering a clean and perfect cut.
Originally, the pastry wheel was called "speronella" (little spur), as its shape was inspired by the spur used by knights.
The first known example of its representation dates back to the 4th century B.C., inside the Etruscan tomb called “Tomba dei Rilievi”, near Cerveteri, where it appears together with other tools to make pasta.
The first illustrated image of a "speronella" appears in 1570 among the pages of "Opera", a gastronomic book written by Pope's personal chef Bartolomeo Scappi.
During Renaissance, speronella becomes an emblem of wealth and well-being: the handle is often engraved with animals, flowers and mythological figures and it is made of ivory, silver, bronze, horn.
The wooden handle is introduced in the eighteenth century, when the wheel becomes a popular tool all over Italy.
